Chef’s Box

June 28th, 2011 by The Cheese Press

Wow!  What a great turnout.  We have our first CSA box, a CSCB….community supported chef box coming out this week and it’s been received quite well.  The first box will be hosted by our friends at Petite Syrah Restaurant in Santa Rosa.  Chef Josh Silvers and his team are hard at work at putting together their favorite pantry items and recipes for you.

www.petitesyrah.com is where you want to head if you have any questions about this amazing restaurant team.

In the box you will also receive a piece of cheese that Chef Silvers loves or feels like you can’t live without.

Many of our customers have decided to start with the first month and then proceed.  If you choose to buy more than one month you’ll get rewarded with more loot.  How can you beat that!

We think our box will not compete with the existing CSA programs, it will complement them.  How many bunches of carrots can you handle before you turn orange.  With our box you can add spice to them or work them into a dish you normally wouldn’t have.

I am actually jealous of the program.  I just created something else I want.  A box full of treats from my favorite Bay Area chefs.    If you are reading this and wonder why you’ve not been asked to be a participating chef, drop me and line and we’ll consider you for the next one.  This is just the beginning.

And to further promote our inaugural chef box we are offering a special discount on our family’s Petite Syrah wine.  Ta da, dinner is served.

And this month marks our 6 years in business in Healdsburg.  Six magical dairy filled years in Sonoma County.  So we will have a host of deals at the shop.   We might even throw a party….so stay tuned.

And thanks for reading as always,

Doralice & Co.

Community Supported Chef Box……or CSCB as we know it!

I think we have seen our fair share of CSA boxes to know what they are about.  They are crates filled with vegetables and fruits from a local farm.  Sometimes you get eggs or fresh milled wheat.  Sometimes you get lucky and get a small bag of baked goods or a jug of milk.  There are now meat and poultry CSA’s which come from farms and meat companies and I’ve even seen a sweet CSA from a local chocolate shop.

Well here at the cheese shop we have tossed about the idea of a cheese box but realize that in order to make it work we would have to put a lot of cheese in the box.  We  realized  that no two people’s cheese tastes are the same and we really enjoy when you visit us and we get to hand select the cheeses for you.   So, we came up with the Chef Box.

The Chef Box is unique in that it is a crate filled with favored pantry items of local chefs.  Each month we will showcase a different Bay Area chef and their wares.  The box costs $30 a month and you can choose to purchase on a monthly basis or you can sign up for multiple months.  We have incentives for you if you choose to buy more than one month and a really tasty incentive if you convince your friends that they need a box too.  Buy 4 months of boxes and you get a gift certificate to the cheese shop.  Buy 6 months and you get a box free.  Refer 10 friends and you get a seat at one of our supper clubs.

We will send an email with the upcoming chefs so that you may plan accordingly.  Our first box will be available July 1st just in time for the holiday weekend.  And we are going to keep you in suspense just a little while longer on who that chef will be so that we can iron out a few details.

If you are interested, sign up or send us an email and we will get you set up.  Boxes will be available the first Friday of each month.  Boxes will also include recipes and information on the chefs and a piece of cheese they love.  Did you think we wouldn’t remember the cheese?

We are very excited and hope that you will sign up for one and continue to support your independent cheese shop.

Good Tidings

We just couldn’t resist after such an arduous year.  We need to be surrounded by our loved ones for the holiday season.  In our case, that’s great food produced by amazing people.

We now carry fresh bread from our friends at Zazu Restaurant.  www.zazurestaurant.com.  Place your orders with us at the beginning of the week and the bread arrives on Fridays.

Toulouse Vineyards Pinot Noir from Anderson Valley

2008 Toulouse Anderson Valley Pinot Noir ($42):
Toulouse’s Vern Boltz kept a light touch on his winemaking, and it has allowed lovely berry fruit to come forward. Deeper sassafras and burnt-bark scents, with a savory edge, citrus highlights and a chewy, slightly knotted finish. On the bigger side, but that fruit shines through.

Still thirsty?…..   How about some fantastic Grenache at $30/btl.

About A Tribute To Grace Wine Company

A Tribute To Grace Wine Co. is dedicated to crafting authentic expressions of Grenache. All wines are single-vineyard sourced to maintain authenticity

I am a New Zealand born winemaker who moved to California in 2006 with a dream of making Grenache. Whilst it is too cool to ripen in my homeland, California boasts the perfect disposition for this beautifully expressive varietal. My focus on winemaking is to authentically convey the pure character of Grenache, and the site on which it is grown, through the craft of winemaking. My production remains under 200 cases per single vineyard Grenache, and is available through my website direct, or via a select circle of restaurants and wine retailers.

Need a nap?  Ok.
